These are shortbread cookies – make sure he knows that! (If he expects them to be moist, he’ll be disappointed. They’re a crumbly, buttery bar cookie, but they’r just delicious.
Toffee Shortbread
Ingredients:
•1 cup (2 sticks) butter softened
•½ cup granulated sugar
•1 ½ teaspoon vanilla extract
•¼ teaspoon almond extract
•2 ½ cups all-purpose flour
•1 cup toffee bits
Directions:
1. Heat oven to 350° F. Line 13x9x2-inch baking pan with foil, extending foil beyond sides of pan.
2. Beat butter, sugar and vanilla and almond extracts in large bowl until fluffy. Gradually beat in flour, beating until well blended and large crumbs start to form. Stir in toffee bits; pat dough into prepared pan.
3. Bake 20 to 25 minutes or until light golden brown. Cool 10 minutes; cut into bars or triangles. Cool completely in pan on wire rack. Cut again over the cuts you made earlier, just to make sure they’re separated.
If he likes CHOCOLATE cookies… this is the recipe for him.
Double Chocolate Cookies
Ingredients:
•1 bag (11.5 oz) Semisweet chocolate chips
•6 Tbsp. unsalted butter
•3 eggs
•1 cup sugar
•1 cup flour
•½ teaspoon baking powder
•1 bag (12 oz) milk chocolate chips
•1 cup chopped walnuts
1.Melt semisweet chocolate chips and butter in microwave or in double boiler.
2.Use and electric mixer to beat eggs and sugar until thick. Stir in chocolate mixture.
3.In small bowl, combine flour and baking powder. Stir into chocolate mixture. Stir in milk chocolate chips and walnuts.
4.Using a sheet of plastic wrap, form dough into two logs, each 2 inches in diameter and about 8 inches long. Dough will be soft, so the plastic wrap should be tight enough to hold it in shape. Refrigerate at least an hour, preferably a few hours or overnight until firm.
5.Preheat over to 375. Unwrap dough and cut into slices or pinch off pieces of dough and roll them into balls. Place 1 ½ inches apart on a greased or parchment lined cookie sheet. Bake 11 minutes. Cool on baking rack.
You’ll win his heart over in no time! How do you think I got my man?
