Fudge Is The Original Old Time Family Favorite Chocolate Sweet Treat by Anna McAnthony
Fudge by definition is a candy that is rich and creamy. It is a semi-soft confection, usually extremely smooth and made using fresh butter, sweet cream, corn syrup, sugar and sometimes some scrumptious flavorings. Flavors could be butterscotch, vanilla, white chocolate, chocolate, buttermilk, Kahlua, kool aid, flavored gelatin, peanut butter, bourbon, pumpkin, mint or even maple. Fudge may have various nuts, such as pistachios, walnuts, pecans, hazelnuts, roasted macadamia nuts, and almonds. Additional ingredients used in unusual or decadent fudge might be: popcorn, crackers, candy canes, cheese, candy bars, lime zest, pineapple chunks, coconut, chocolate chips, caramel, espresso beans, cookies, chocolate chunks, marshmallows, or cherries and other candied or dried fruit.
While the word fudge can be defined differently, none of those meanings are equivalent to the timeless family favorite, premium chocolate fudge. In America, the word fudge nearly always means the heavenly, rich and creamy chocolate confection. Sometimes you’ll find the word fudge used on boxes of brownies or cakes, but this only means that they have added some additional chocolate flavoring to the mix.
According to history (although disputed) fudge was created by accident with a failed batch of candy; most likely caramels, around 1886. From this spoiled batch of candy came the cooks’ exclamation of or the phrase ‘oh, fudge!’ The initial written evidence of fudge was in a letter from Poughkeepsie, New York. Emelyn Battersby Hartidge, a student from Vassar, stated that the cousin of a schoolmate made fudge. In Baltimore in 1886, the confection was 40 cents per pound. In 1888 Emelyn got the recipe and made 30 pounds for the Senior Auction. Other colleges (Smith and Wellesley) then made their own fudge recipes.
Compared to favorite sweets dating back a thousand years or more, fudge is relatively new. Some of the early fudge flavors included chocolate, vanilla and brown sugar penuche. Mackinac Island, in Michigan is the fudge capital of the United States. And nowadays the mixtures of fudge ingredients or flavorings are almost endless. A few of them are: maple walnut, chocolate cappuccino, vanilla caramel, lemon butter, raspberry coffee, vanilla cherry chocolate chip, peanut butter, chocolate caramel pecan, chocolate cheesecake and dark chocolate.
Just about everybody likes eating rich, sweet fudge, but a lot of people think it is hard to make. The earliest fudge recipes were fairly ambiguous and extremely difficult. Difficulty had a lot to do with which recipe, the quality of equipment, the kind of ingredients and the patience taken to make it right. Also, being certain of the accurate measurements, cooking time and continual stirring were critical for perfect fudge candy. Getting the ingredients to the proper temperature, and stirring for the proper amount of time are necessary in order for the fudge to be smooth and not gritty. Moreover it is extremely easy to under cook or over cook this sweet treat, which can result in it not setting up or the ingredients getting scorched.
