For a refreshing sweet all summer long, try these fruit tart biscuits, varying the fresh fruit ingredient according to what’s ripening at the moment–strawberries, raspberries, peaches, apricots, or bilberries.
3 cups (779 grams ) Flour
1 cup (225 grams) Sugar
1 tea (5 ml) Baking Soda
1/2 cup (113 grams) Butter, melted
2 cups (454 grams) Fresh Fruit

2 T (28 grams) Flour
Fresh Fruit Tart Cookies
Instructions: Sift flour, sugar and baking soda together into a large bowl; add melted butter and mix until crumbly. Pat dough to cover cookie sheet that has been treated with pan spray. Bake at 176C degrees for 30 minutes or until lightly browned. Mix 2 cups fresh fruit with sugar and flour; evenly spread over hot biscuit base. Return to oven and bake for 10 minutes.
These no-bake cookies are great for Christmas. They also spark the imaginations of the young ones around the picnic table as to weather conditions on the other side of the globe.
Eskimo Snowballs
1 cup (225 grams) softened butter
1-1/2 (338 grams) cups sugar
4 T ( 55 ml) water
1 tea (10 ml) vanilla extract
5 T (76.6 grams) cocoa powder
4 (907) cups quick cooking oatmeal
Small bowl of Confectioner’s sugar
Small bowl of flaked coconut
Cream butter and sugar until light and fluffy. Work in water and vanilla. Add the cocoa and oatmeal, mixing well. Form small balls of dough–add a bit more water if dough does not stick together– and roll in powdered sugar and coconut until they resemble snowballs.
Make use of a traditionally tangy holiday berry–the cranberry–in these delicious shortbread biscuits.
Cranberry and White Chocolate Dreams
1/2 cup (113 grams) softened butter
1/4 cup (50 grams) sugar
1/2 tea vanilla
3/4 cup (95 grams) flour
1/4 cup (45 grams) yellow cornmeal, finely ground
1 T (8 grams) cornstarch
Dash of salt
1/3 cup (50 grams) dried cranberries
1/4 cup (45 grams) white chocolate chips
Cream butter and sugar until fluffy; add vanilla and mix well. In separate bowl, mix dry ingredients; add butter mixture and combine until no flour is visible on the sides of bowl. Add dried cranberries and chocolate chips. Roll into small balls and bake at 190C degrees for 10-12 minutes.
